H I T E    W I N E S
| PICO
   A light, fresh, easy-drinking wine made from Vermentino and Carignan
Blanc. Light straw in colour, with fresh flowery and lime aromas, and a complex
finish. Best enjoyed young as an aperitif or with light foods. |

| | TERAS
   A food wine with lots of character made from hand-harvested Vermentino,
Carignan Blanc and Roussanne, barrel-fermented and aged in larger (500 litre)
French oak barrels. Golden straw in colour, with exotic fruit and honey in the
finish. When young it needs a few hours breathing to show well, and will improve
with an additional three to five years aging. |  |
R
O S E    W I N E S
| | A
fruity, well-balanced blend of Cinsault, Carignan, Grenache and Syrah from parcels
dedicated to the production of rosé. Enjoyable as an aperitif or as a food
wine, with lightness and freshness balanced by body and aroma that complement
a variety of foods. Like most rosé wines it is intended to be drunk young,
but will age well for another year or two. |  |

our Red Wines are unfined and unfiltered.
| PROTEUS
   A wine for everyday drinking, blended mainly from Merlot (for fruit
and structure) and Cinsault (for balance and length), with some Carignan, Syrah,
Grenache or even Cabernet Sauvignon depending on the vintage. This medium-bodied
wine should be drunk young (2-3 years) for its fruit, but some vintages have aged
well. The name derives from the shape-changing Greek god. Our original intention
was to make a consistent wine, but the vintage effects proved more powerful than
we expected and the wine is different from year to year, hence Proteus.

ALTO   
Mainly Grenache and Syrah from low-yielding, well-exposed hillside parcels. Depending
on the vintage, we also blend in some Carignan, Cinsault, and, from 2003, Mourvèdre.
Hand-harvested, wild-yeast fermented, barrel-aged in large French oak, this is
a wine that can age well in bottle for up to ten years. An elegant wine made to
complement food, this is our interpretation of the Coteaux du Languedoc classic.
The name is derived from the same Latin root as Poujol, meaning a platform or
hill. |  |

time to time we make special blends in small quantities. The following
may still be available:
LA
BETE NOIRE    Personally unenthusiastic about Cabernet Sauvignon, we tried not to
draw attention to the 3 000 vines that were on the Domaine when we bought it.
However, they were on excellent terroir for Cabernet, producing a rich, ripe and
velvety wine, and over time this cuvée developed. We only make it when
we feel that the Cabernet Sauvignon is interesting (1995, 1998, 2000, 2002,
2003),
and we blend it, usually with Carignan, and sometimes with a little Merlot
and/or Syrah, to create a unique wine. Barrel-matured, this wine can age easily
for 5-10
years.
GRES
DE MONTPELLIER We have used this new sub-appellation of the Coteaux
du Languedoc AOC to produce an exceptional cuvee from old Syrah vines. The
wine label is from an original painting by the London artist, Tony Hull www.tonyhull.com.
